Growing up in an Italian family these tricolor cookies have always been a dessert staple. If by any chance you aren't familiar with them you need to go to your local bakery and prepare to fall in love! They are an almond flavored cake-like cookie with raspberry jam in between each brightly colored layer and topped with a chocolate coating. ARE YOU DROOLING YET? The other night I was craving these cookies and my wheels starting turning with drink ideas. Creating dessert cocktails is kind of my "thing". I love the idea of finishing the night with a drink that is also a dessert. (It's a win-win in my book!) After a nice dinner with my honey we came home and I told him to sit tight while I make him one of my newest creations. (You always need an official taste tester!) I brought him over this Rainbow Cookie Martini and his face lit up. (As we both grew up loving these cookies) He is not always a dessert cocktail guy so I took it as a big compliment that he quickly drank the entire thing and of course snagged the cookie off of the rim. If you want to impress guests at a gathering or are craving a decadent dessert drink this is a drink recipe you MUST try! It's easy to prepare and delicious to drink. Cheers!

I think rather than raspberry preserves the use of raspberry liqueur, such as chambord, would be more appropriate- but great idea! and if you're using a cream liqueur (creme de cacao) is it necessary to add cream to the cocktail?

I like that idea. The cream would give it that dessert feeling I think where no half and half would harden it quite a bit, make it more a cosmo-like cocktail.

Hi Tammy! Thanks for the response. I agree that it needs the touch of cream to add the creamy flavor & texture. I tried it with both raspberry preserves & chambord you could definitely use either one interchangeably. It will just be a little more boozy with the chambord!

Creme de cocoa isn't creamy. It's a dark, or clear liqueur.
